Some_Atiny, you are correct. being a vegetable is another way to say the person is in a vegetative state. That means their basically brain dead but their body lives on. So body functions like breath and heart beat may still occur but the brain is not longer active/functioning. It also means they are confined to a bed, unmoving.
By vegetable they mean someone that cannot do anything. Like how vegetables can’t move or think, that’s what they did to the og fl. Something like that. I dunno how to explain.
