I believe she thought that it was unfair that she and her daughter are trying hard but get little to nothing, while Violet is from a low background and is struggling (or lazy the teacher thinks) yet gets luxurious clothes like that suddenly. So it’s unfair, she’s also not convinced that Violet is the real Saint (because they all came from noble families before), so she looks down on her.
