Option 1. It’s a status thing. While she’s his hostage she’s also, technically, a princess. Calling her name would be disrespectful and pretty much taking advantage that she doesn’t know better.
Option 2. It’s a familiarity thing. Once again, he doesn’t want to take liberties with her as they are not close. But he also doesn’t want to give others the impression they are.
Option 3. The king could still order him to execute her at any moment so he’s trying (failing) not to get attached.
Option 4. Something related to his tragic backstory we haven’t seen yet.
